[sylvia] Kevin’s Peking duck t is delicious but it takes FOREVER to make. Although I don’t do any of the cooking I still have to wait for dinner. And I not a patient person. I also get hangry if I don’t eat on a regular schedule so this meal is a tough one.

[Declan] Daddy’s steps to make duck (Not full instructions)
[Daddy]The first step is basically to blanch the duck with a seasoned water. The seasoning has Chinese five spice in it. actually that’s not the first step the first step is to stuff the bird with hoisin sauce and a mixture of Chinese five spice then you seal the cavity of the duck with a bamboo skewer. Then you do the blanching of the duck. After the duck is blanched you have to coat it with maltos syrup I do this with a brush. After that you basically just have to let the duck sit and dry out for a long time. Actually that’s not true I miss the step you have to separate the skin of the duck from the meat you actually should do that at the very beginning I forgot to mention that this makes sure that when the duck ends up getting cooked the skin will stay crispy and not get softened by the oils of and juices of the duck. After the duck has dried for three days you smoke it with some apple Woods smoke. Then you roast it I’ve been doing it in our smoker but you can do it in the oven. Once it’s done baking you have to blanch it again with hot oil this gets the skin nice and crispy then you’ve got to cut the skin off before it gets soft from the juice.
