Easy & Delish Tandoori Cauliflower

As promised, our recipes are either grand showcases or dead easy scrappy recipes for weekday nights. This is a scrappy one. There will be no long preamble about the merits of cauliflower or curry for your health. But note: this is good for you!

A friend of mine started her own spice business! It’s called Chaude Curry and she gave me this recipe to try. It totally fits my needs for dead easy yet yummy vegetables, and so, here it is. As usual I took the liberty to cut it down to the bare bone requirements but feel free to check out the full recipe.

You will need:

  • 1 head of cauliflower, chopped into florets
  • 1 cup full fat greek yogurt
  • 2 tsp of my friend’s House Masala Gold spice
  • Salt to taste

Instructions:

  • Mix the yogurt, spice, and salt together, then pour onto cauliflower in a bowl and let marinate for a couple hours
  • Bake in the oven at 400F for 40 mins

Should turn out crispy and brown, but soft on the inside. So good!
